1. Need a good cut of Corned Beef Brisket from your butcher, Cabbage, Red Potatoes, Guinness Beer, and Brown Sugar.

2. Preheat lower oven to 300 degrees F (150 degrees C) and rinse the beef and pat dry.

3. Cut some of the fat off the bottom of your corned beef or have your butcher do it for you.

3. Rub the brown sugar on the corned beef to coat entire beef, including the bottom.

4. Place the brisket on rack in a roasting pan or in a deep pot.

5. Clean and cut cabbage to desired size and throw into roasting pan or pot with brisket.

6. Pour 12 fluid ounces of Guinness beer around and gently over the beef to wet the sugar and over the cabbage.

7. Cover with foil and place in preheated oven. Bake for 2 1/2 hours. Allow to rest 5 minutes before slicing.

Red Potatoes:

1. Preheat top oven to 350 degrees F

2. Wash and Cut Red Potatoes to Desired Size

3. Place potatoes into a corning ware

4. Sprinkle salt, pepper, and garlic to your liking onto the potatoes. Drizzle a little olive oil on top of them.

5. Place into preheated oven and bake for about 2 1/2 hours (varies a bit with different ovens)

Editor’s Note: You may add any vegetables in the corning ware that you like, such as onions, carrots, etc. Put them in with the potatoes during the last hour that the potatoes are baking so that the vegetables themselves don’t over cook. Once everything is cooked present your Irish meal in your favorite serving dish.
