Skip the mayo and bring on the avocados please! “Yummy,” is the absolute best word to describe this awesome avocado dish. So get ready to trade in your traditional egg salad and bring on this zesty take to this old family favorite! So lets get started.
Now according to my daughter’s Aunt or “Titi” April, all you need to do to prepare for this dish is to give it some TLC, a.k.a. Time, Love, and Concentration-Nice joke April.
Seriously though, this dish is quite simple to put together and so I think you’ll find that you will enjoy making it for family lunches, dinners, bbqs, potlucks, and parties. Think Green Eggs and Ham, but minus the ham though. So here it is, I won’t make you wait any longer for this delicious recipe for ‘Titi April’s Avocado Egg Salad.’
- 4-6 Large Eggs
- 2-3 Ripe Hass Avocado
- 1 Lime
- 1 Onion (I like yellow onion, but you can choose white or red at your preference)
- Salt and Pepper
Cooking Directions:
1. Hard boil 4-6 large eggs. If you don’t know how to hard boil eggs, then go here for instructions (and no I don’t think you are dumb for not knowing how to do this). How To Hard Boil Eggs.
2. Once eggs have cooled a bit, peel the shell off and then chop the eggs (chop them to the creamy consistency that you will like in your egg salad).
3. Then take your 2-3 ripe Hass Avocados and cut, peel, then chop and mash them into a consistence that you like.
4. Cut your lime and squeeze lime juice into your avocados (put as much lime juice as you think is good to taste.)
5. Add a tsp of salt to the avocados (or a bit more or less to taste)
6. Then add a dash of pepper to avocados (you can add a bit more or less to taste)
7. Chop up 1/4 cup of onions and add to avocados (if you don’t like onions then skip this)
8. Now take your avocado and mix everything that you just put into it. By now it has pretty much become a guacamole! Now take your “guacamole” mix and mix that all together with your chopped up hard boiled eggs! Voila! You now have ‘Titi April’s Avocado Egg Salad!’
9. Refrigerate it for an hour and then serve! You can serve it up alone, or spread it on crackers, or put it into a tortilla, or in-between your favorite type of bread for a sandwich!
I want my daughter to love this recipe because I believe it’s a healthier and yummier alternative to the mayo that is normally put into egg salad.
