I love this pizza recipe first because it is so fast, easy and fun.
Second because everyone loves them! The party always ends up in the kitchen as I find my guests hovering over the oven waiting for the next batch!
**Liza’ tip: The pizzas are best served hot – so I pace myself by cooking no more than two at a time then wait until they have all been eaten to pop more in the oven.
4 servings per pizza
Ingredients:
- Organic whole wheat tortilla – I like ‘Rudi’s Bakery Whole Spelt Tortillas’ (I keep them in the freezer to have on hand)
- 3/4 cup Manchego cheese grated
- 1 Tbsp Olive oil
- 1/4 tsp garlic minced
- 1 tsp Italian flat leaf parsley chopped
- 1 pinch Kosher salt or sea salt
Directions:
- Preheat oven to 500 degrees
- Place tortilla on a cookie sheet lined in recycled tin foil
- Spread 1 Tbsp olive oil evenly over the tortilla
- Sprinkle Manchego cheese on tortilla leaving an inch around the edges
- Sprinkle on garlic and parsley
- Sprinkle a pinch of kosher salt
- Bake in the oven until cheese is melted
- Take pizza out of the oven and transfer to serving plate cut in four
**Liza’s tip: For fun I serve on a round cutting board and slice the pizza in front of my guests with a stainless steel pizza cutter.
