I love this pizza recipe first because it is so fast, easy and fun.

Second because everyone loves them! The party always ends up in the kitchen as I find my guests hovering over the oven waiting for the next batch!

**Liza’ tip:  The pizzas are best served hot – so I pace myself by cooking no more than two at a time then wait until they have all been eaten to pop more in the oven.

4 servings per pizza

Ingredients:

  • Organic whole wheat tortilla – I like ‘Rudi’s Bakery Whole Spelt Tortillas’ (I keep them in the freezer to have on hand)
  • 3/4 cup Manchego cheese grated
  • 1 Tbsp Olive oil
  • 1/4 tsp garlic minced
  • 1 tsp Italian flat leaf parsley chopped
  • 1 pinch Kosher salt or sea salt

Directions:

  1. Preheat oven to 500 degrees
  2. Place tortilla on a cookie sheet lined in recycled tin foil
  3. Spread 1 Tbsp olive oil evenly over the tortilla
  4. Sprinkle Manchego cheese on tortilla leaving an inch around the edges
  5. Sprinkle on garlic and parsley
  6. Sprinkle a pinch of kosher salt
  7. Bake in the oven until cheese is melted
  8. Take pizza out of the oven and transfer to serving plate cut in four

**Liza’s tip:  For fun I serve on a round cutting board and slice the pizza in front of my guests with a stainless steel pizza cutter.
