Oh when I think about my husband’s mac & cheese I simply can’t wait for the holidays. It has become THE must-have holiday side dish in our family. Now we all know that what is SO fantastically yummy about homemade mac & cheese is of course all of the awesome dairy that goes into it! Yes, I’m talking about that wonderful whole milk and delectable cheeses that are within the recipe. My hubby has been kind enough to share his McCracken’s Mac & Cheese recipe with everyone!
1 Box – Elbow Pasta 6 tbls – Butter 6 tbls – Flour1 ½ Cup – Whole Milk
½ Cup – Grated Yellow Onion
Salt and Pepper as you like
2 Cups – Grated Cheddar Cheese
1 Cup – Grated Colby Cheese
½ – 1 Cup – Bread Crumbs Boil pasta al dente. In a large pot, at a medium heat, make a rue of 6 tablespoons butter and flour, stirring constantly to prevent burning and lumps. Add milk, stirring constantly. Add grated onion, and salt and pepper. Continue stirring until onion is cooked. Remove from heat and stir in cheddar cheese and colby, reserving some to sprinkle over the top later. Add pasta to pot, and stir. Pour macaroni and cheese mixture into shallow baking pan and sprinkle with reserved cheese and bread crumbs. Bake in oven for 30 minutes at 350 degrees. Kick up the broiler for a few minutes at the end to create a nice crust.
