Tis the season of giving thanks and so here are my two BIG reasons why I am thankful for my milk. Putting aside all of the awesome health benefits of drinking milk like how it helps give you strong bones and helps make your smile healthier, I’m thankful for milk because of what it does to my taste buds! I am thankful for my milk because without it I couldn’t have Arroz Con Leche (a.k.a rice pudding). Yes I LOVE homemade Arroz Con Leche and of course “leche” mean “milk,” so without this very important ingredient I couldn’t have this dessert I love.
Since I was a child, my mom always made Arroz Con Leche for Christmas! It is still one of the biggest things about Christmas that I look forward to. It is seriously the yummiest dessert that I have ever had. You can only imagine how excited I am that Christmas is now just around the corner.
Now my mom has never shared her secret Arroz Con Leche recipe (I will get it out of her someday), however, I found a good one to share with you courtesy of Food.com that has received good reviews. I hope you enjoy it!
- 1 1/2 cups long-grain white rice, uncooked
- 2 cups water
- 1 large cinnamon stick (or 2 smaller ones)
- 4 cups milk, warmed (see description)
- 1/2 teaspoon vanilla (or more, to taste)
- 3/4 cup sugar

In a large saucepan or pot, combine water, rice and cinnamon sticks and bring to a boil. Reduce heat to simmer, cover pot and heat for 10 minutes or until water is absorbed.

Add the warmed milk, cover and continue to cook over low heat for another 15-20 minutes stirring after 8-10 minutes. (The mixture will thicken as the rice absorbs the milk).

Add the sugar and vanilla and continue to simmer (uncovered) for 3-5 minutes to dissolve sugar completely (It will thicken even more as it cools).

Place into a large serving dish or individual custard cups. Place cinnamon stick on top and sprinkle with ground cinnamon for garnish if desired. Serve warm or cold, for dessert, snack, or breakfast.
The second milk “taste-bud pleaser” I enjoy will make you laugh because it is seriously a simple pleasure, but I absolutely LOVE drinking strawberry milk! Don’t ask me why, but chocolate milk was never my first choice (although I do like it too), but when it came to milk mixology, it was all about Strawberry, and when I was pregnant with my daughter I inhaled it like it was going out of style. I’m actually surprised that she didn’t demand strawberry milk when she was born-LOL!
